C - Coconut-butternut-squash-soup

OK, this is cheating. Not once, but twice. It's not a Gerlach-recipe and the German word doesn't even start with C, I admit. Actually I wanted to cook something out of Gerlach's Alphabet . But there was just Champignon,Cocktails, Couscous and Chufanuss.
Don't get me wrong, it's not that I don't like these things. Chufanuss I even do not know. I love having a cocktail (or two) but not on a Monday evening alone in your apartment.Champignons are OK, too, except the canned ones which I try to avoid - if possible. Couscous is fine, because I finally got over one of my worst eating experiences I had in a children's camp about 10 years ago. The chef tried hard to serve healthy food for the kids and underestimated the strength of their will not to eat those tiny little somethings they never had seen. After that he had to (he did not actually had to, but he did) hide them in all the remaining meals of the week. It wasn't just me who recognized this,... Well, you see, I did not feel like eating those things yesterday evening.

It was a soup day and a pumpkin day, too. All day long it did not stop raining and the sky was covered with clouds. We had to turn on the radiators for the first time this year. Autumn had arrived and all I wanted was a soup warming my belly from the inside. I wanted a steaming plate with a nice color and a rich taste. Patricia was easy to persuade and that's what we made:

ingredients (serves 4)
1 1/2 pounds butternut squash
2 potatoes
2 tablespoons of olive oil
1 small red pepper
1 onion
1 can (about 1 1/2 cup) coconut milk
1 inch fresh ginger
Salt, Pepper, Curry
2 cups vegetable stock

1. chop potatoes and squash into big chunks
2. cut red pepper and onion into tiny pieces. Peel and grind ginger.
3. combine squash, olive oil, onion and red pepper in a saucepan and bring to a slow boil for about 5 min.
4. Add potatoes, ginger and vegetable stock and cook, stirring once in a while, 20-30 minutes.
5. Purée mixture in a blender and add coconut milk. Do not cook again. Finally add Salt, Pepper and Curry.
